Creamed Savoy Cabbage & Apple

Beautiful winter savoy cabbage is transformed into a showstopping roast dinner side with seasonal apples and generous swirls of double cream.

  • 1 red onion
  • 2 garlic cloves
  • 2 apples
  • 1 savoy cabbage
  • 250ml double cream

Method

1. Peel the red onion and finely slice it. Peel the garlic cloves and finely slice them. Peel the apples and cut them into quarters, slicing out and discarding the cores. Cut the apples into small chunks.
2. Slice the cabbage into quarters and cut out the woody cores. Finely shred the cabbage leaves.
3. Pour 1 tbsp oil into a large pan and warm to a medium heat. Slide in the sliced onion, garlic and apples. Season with salt and pepper. Fry gently for 8-10 mins, stirring occasionally, till the onion and apple have softened.
4. Add the cabbage into the pan. Pour in 250ml double cream. Give everything a good stir. Cover the pan with a lid and cook over a medium-low heat for 10 mins, stirring from time to time, till the cabbage is tender with a slight bite. Taste and add more salt or pepper if needed, and serve.

My family does not generally care for cabbage and I usually end up making cole slaw but this was delicious! The apples and cream were such an inspired touch. My husband (also not a big cabbage fan) said it was now he favorite way to eat it.
