Ingredients
- 400ml coconut milk
- 1 onion
- 2 garlic cloves
- 1 thumb of fresh ginger
- ½ chilli (more or less, to taste)
- 4 kaffir lime leaves
- 1 head of broccoli
- 2 limes
- Boiling water, as needed
- Sea salt and freshly ground pepper

Method
1. Pour your coconut milk in a pan.
2. Peel and coarsely grate your onion. Peel and chop your garlic and ginger. Thinly slice your chilli. Add it all and the kaffir lime leaves to the coconut milk. Simmer over medium heat for 5 mins.
3. Finely chop your broccoli. Trim the woody bits from the stalk and chop up all the softer bits.
4. Add the broccoli to the coconut milk. Simmer for 5 mins or till the broccoli is just softened. Grate in the lime zest. Add a good squeeze of juice.
5. Whizz till smooth. Top up with water if needed, to desired consistency. Taste. Season to taste. Eat up.
