Walnuts about Salad Dressing

This nutty number’s for more than your leaves – it’s just as stunning over steamed green beans.


  • ½ mug of walnuts
  • ½ smallish garlic clove
  • 1 lemon, juice only
  • ½ mug of mayonnaise*
  • Sea salt
  • Freshly ground pepper

*For a lighter dressing use ¾ mug of natural or Greek yogurt and a splash (about ¼ cup) of cold water).

1. Whizz walnuts and garlic to a paste in a food processor or crush in a pestle and mortar till smooth.
2. Whip in the lemon juice and mayo. Add enough milk or water to thin a bit to desired consistency. Season to taste.
3. Amazing with crisp lettuce or peppery leaves. Throw some roughly chopped walnuts into the mix for more flavour and crunch.
