Rainbow Snack & Share Plate

An after-school snacking plate is a great way to encourage your kids to add more diversity to their daily meals. Prepare a mix of fresh fruit and veg, wholegrain snacks, cheese and houmous, arrange them on a plate or in a snacking tin and leave it out so they can help themselves. Perfect for snacking after school or grazing during the day on the weekend.

Ingredients

  • 1 red pepper
  • A chunk of cucumber
  • 1-2 carrots
  • 3-4 clementines
  • 2-4 mini Cheddar snacks
  • A few tbsp houmous
  • A large handful of red grapes
  • A large handful of blackberries
  • 4-6 wholegrain rice cakes
  • A handful of banana chips

Method

1. Halve the red pepper, scoop out the seeds and white pith. Slice into batons. Chop the cucumber into rounds or batons, depending on preference. Scrub, trim and chop the carrots into batons or rounds – no need to peel unless you prefer to. Peel the clementines, and separate them into segments. Depending on the age of the kids, you can chop the Cheddar chunks into cubes or leave them whole.
2. Scoop the houmous into a bowl and pop it on a platter. Arrange the red pepper, cucumber, carrots and clementines around them. Add the red grapes and blackberries to the platter. Snap the rice cakes in half and add them to the plate with the Cheddar and banana chips.
3. Put the platter out and let people help themselves.
