Gooseberry, Lime & Mint Fool

A quick and easy dessert that’ll be ready before you can say ‘pudding’. This subtly sophisticated, jammy spin on fruit fool ripples a cool mixture of cream and yogurt with our gooseberry, gin and lime jam, topped off with fresh, tingly mint and sweet heat from organic crystalised ginger.

Ingredients

  • 250ml double cream
  • 150ml yogurt
  • 2 tbsp caster sugar
  • 1 lime
  • 6 tbsp gooseberry, gin & lime jam
  • A handful of mint, leaves only
  • 2 tbsp crystalised ginger

Method

1. Pour 250ml cream and 150g yogurt into a large bowl. Add 2 tbsp caster sugar and grate in the lime zest. Carefully whisk the cream and yogurt together, till just set.
2. Spoon the jam into a second bowl and stir to loosen it a little if needed. Gently fold the jam into the cream mixture to ripple them together.
3. Serve the gooseberry fools in small bowls, garnished with fresh mint leaves and a few pieces of crystalised ginger.
