Take your afternoon tea on a trip to the Med with these tangy sandwiches filled with creamy goat's cheese, juicy semi dried tomatoes and fragrant basil.


  • 8 slices of olive bread
  • 100g soft goat's cheese
  • 100g semi dried tomatoes in oil
  • A small handful of basil leaves
  • A small handful of rocket

1. Cut the crusts off 8 slices of olive bread. Spread the goat's cheese onto 4 of the slices.
2. Dot the tomatoes over the goat's cheese and tear over the basil leaves. Pop a pinch of rocket leaves on top.
3. Crack over some black pepper and drizzle 1 tsp oil over each topped slice.
4. Sandwich the slices together. Cut the sandwiches in half lengthways so you have 8 finger sandwiches. Serve straight away.
