Take your afternoon tea on a trip to the Med with these tangy sandwiches filled with creamy goat's cheese, juicy semi-dried tomatoes and fragrant basil.

Ingredients

  • 8 slices of malted bread
  • 100g soft goat's cheese
  • Butter, for spreading
  • 100g semi dried tomatoes in oil
  • A small handful of basil leaves
  • A small handful of rocket

Method

1. Cut the crusts off 8 slices of malted bread. Spread the goat's cheese onto 4 of the slices. Butter the other 4 slices.
2. Drain the tomatoes and dot them over the goat's cheese. Tear over the basil leaves. Pop a pinch of rocket leaves on top. Crack over some black pepper.
3. Sandwich the slices together. Cut the sandwiches in into 8 fingers. Serve straight away.
