Chimichurri

Three ways with steak… We’ve come up with easy three ways to jazz up your steak. You can find the other two here: Herby Butter and Creamy Mushroom & Tarragon Sauce Chimichurri is a herby steak sauce from Argentina. Nothing to do with cockney chimney sweeps. It’s usually made with parsley and oregano but we’ve thrown in coriander too and a kick of red chilli.

Ingredients

  • 2 handfuls of flat leaf parsley, chopped
  • 1 handful of coriander, chopped
  • 1 handful of oregano, chopped
  • 2 garlic cloves, crushed
  • 1 red chilli, deseeded and finely chopped
  • A generous glug of olive oil
  • A generous glug of red wine vinegar
  • Sea salt and freshly ground black pepper

*Chopping your herbs by hands is the more authentic way to make chimichurri but if you don’t have time, pop your greens in a food processor and blitz.

Method

1. Stir together your herbs, chilli and garlic in a large bowl.
2. Pour in your vinegar and olive oil till you have a drizzly consistency, add more if you like a looser sauce.
3. Season and spoon over steaks.
