Charred French Beans with Peanut & Tahini Dressing

Grilling French beans so they crackle and char brings out their sweetness. A Szechuan-inspired peanut sauce turns them from side dish into super star.

Ingredients

  • 400g French beans
  • 1 tbsp olive oil
  • Sea salt
  • 1 garlic clove
  • 2 tbsp peanut butter
  • 1 tbsp tahini
  • 2 tbsp tamari
  • ½ tbsp cider vinegar
  • ½ tbsp toasted sesame oil
  • A pinch of dried chilli flakes

Method

1. Heat your grill to high. Trim the woody ends off your French beans. Toss them with the olive oil and a small pinch of salt. Set aside.
2. Spread the beans out on baking tray. Grill for 10-15 mins till they’re a little charred.
3. While the beans grill, peel and crush the garlic. Pop it in a small pan. Add 3 tbsp water, the peanut butter, tahini, tamari, cider vinegar and sesame oil. Stir together over a low heat for 2-3 mins to warm through.
4. Place the beans in a serving bowl. Top with the peanut sauce and sprinkle with a pinch of dried chilli flakes to serve.
