A true celebration of the humble celeriac, coarsely grated and bound with a rich and sharp mixture of yogurt, mayonnaise, lemon and mustard. Perfect alongside roasted meat, cold cuts and cheese.

  • 1 garlic clove
  • 1 lemon
  • 4 tbsp mayonnaise
  • 4 tbsp Greek style yogurt
  • 1 tbsp wholegrain mustard
  • Sea salt and freshly ground pepper

Method

1. Peel the outer bark off the celeriac and coarsely grate it into a large bowl. Peel and grate in the garlic clove and the lemon zest. Squeeze in the lemon juice. Spoon in 4 tbsp mayonnaise, 4 tbsp yogurt and 1 tbsp wholegrain mustard. Sprinkle with a generous pinch of salt and pepper and stir till well combined.
