Warm Garlic, Lemon & Parsley Butter Sauce

This easy, warm, garlicky butter sauce is delicious drizzled over baked lobster and served as a dip for hot, grilled prawns. Drizzle it over griddled scallops or toss it with freshly cooked spaghetti and picked crab meat to make a mouthwatering pasta dish.

  • 6 garlic cloves
  • 1 lemon
  • 3 large sprigs of curly parsley
  • 250g butter

Method

1. Trim, peel and finely chop the garlic. Finely grate the zest from the lemon. Finely chop 3 large parsley sprigs, leaves and stalks.
2. Dice the butter and scoop it into a small pan. Gently warm over a low heat to melt it. Add the garlic and very gently cook, stirring occasionally, for 8-10 mins till the pan smells sweet and aromatic. Keep the heat really low to slowly cook the garlic without browning it.
3. Add the lemon zest to the pan. Squeeze in the juice from half the lemon. Add the chopped parsley with a pinch of salt and pepper. Stir together for 1-2 mins till the pan is aromatic. Taste and add more lemon juice or seasoning, if you think it needs it.
4. The Warm Garlic, Lemon & Parsley Butter can be poured into a serving bowl (or individual serving bowls) and served with grilled prawns, lobster or crab for dipping. Or drizzle it over seared scallops or baked lobster halves.
