Tuna Arrabbiata

A seafood twist on a spaghetti all'arrabiata, this dish is perfect for people who like a little heat in their pasta sauce. The tomato sauce is spiced with fresh chilli, while garlic and oregano add aromatic flavours. Simmered with flakes of tuna, it makes a rich and tasty midweek meal.

Ingredients

  • 1 onion
  • 3 garlic cloves
  • 1 chilli
  • 2 x 160g tins of tuna in spring water
  • 400g tin of chopped tomatoes
  • 1 tsp dried oregano
  • 400g spaghetti
  • 50g grated Parmesan

Method

1. Bring a large pan of salted water to the boil. Trim, peel and finely chop the onion. Peel and crush or grate the garlic cloves. Slice the chilli in half. Scoop out the seeds and white pith if you prefer less heat. Finely slice the chilli. Drain the tuna.
2. Place a large frying pan on a medium heat. Add 1 tbsp olive oil. Add the onion and season with a pinch of salt. Fry, stirring often, for 6-8 mins till glossy. Add the garlic and chilli and fry for 2 mins, stirring, till fragrant.
3. Tip in the chopped tomatoes and add the dried oregano. Use a fork to flake in the tuna. Turn up the heat under the pan and bring the mixture to a gentle simmer. Cook for 6-8 mins till the mixture has thickened slightly to form a rich sauce. Check for seasoning and add more salt and pepper, if you think it needs it
4. While the sauce simmers, check the water in the other pan. Once the water is boiling, add the spaghetti and simmer for 8-10 mins till almost tender. When the pasta is ready either drain it in a colander, reserving a mugful of water, or use tongs to lift the pasta directly into the pan of sauce. Toss well to mix, trickling in a little of the reserved pasta sauce to loosen it.
5. Divide the pasta between 4 warm plates. Sprinkle over the Parmesan and serve.
