Spicy Garlic Prawn Spaghetti

This light, fresh pasta dish is based on the mouthwatering seafood pastas served all along the Italian coastline throughout the summer holidays. It's simple and quick – you'll have it ready in under 30 minutes – and bursting with flavour. The easy sauce is made with fresh cherry vine tomatoes gently cooked with garlic, parsley and lemon. Add juicy Wild Atlantic prawns along with perfectly cooked spaghetti and you have the perfect summer evening meal. The prawns can't be frozen, so this is a pasta dish you'll need to cook straight away.

  • 3 garlic cloves
  • 1 chilli
  • 500g cherry vine tomatoes
  • A handful of flat leaf parsley
  • 1 lemon
  • 200g wild Atlantic prawns
  • 500g spaghetti

Method

1. Place a large pan of salted water on to boil. Peel and finely slice the garlic. Halve the chilli and scoop out the seeds if you prefer less heat. Dice the chilli. Halve the cherry tomatoes. Finely slice the parsley stalks. Finely chop the leaves. Keep the parsley leaves and stalks separate. Zest the lemon. Tip the prawns into a colander and rinse with cold water.
2. When the water is boiling, tip in the spaghetti and cook for 8-10 mins till cooked but still has a little bite.
3. Heat 1 tbsp olive oil in a large frying pan. Tip in the tomatoes. Fry, stirring occasionally, for 5 mins till softened. Add the garlic, chilli, lemon zest and parsley stalks and fry, stirring, for 1 min till fragrant.
4. Add the prawns to the tomatoes and cook, stirring, for 3 mins. The prawns are already cooked, so you just want to warm them through.
5. Add a squeeze of lemon juice to the pan. Season with plenty of black pepper. Toss to combine the pasta, prawns and tomatoes. If it seems a little dry, trickle in a little of the pasta water. Taste and add more lemon juice, salt or pepper.
6. When the pasta is ready, carefully scoop out a mugful of the starchy water – mind your fingers or use a ladle. Drain the spaghetti, then add it to the tomatoes and prawns.
7. Divide the pasta between 4 warm plates. Scatter over the parsley leaves to serve.
