Mango, Pineapple & Banana Smoothie Bowl

Brighten up your breakfast with this smoothie bowl. Juicy pineapple and sweet mango blitzed with coconut and a zingy squeeze of lime. We've topped it with a mix of nuts, seeds and goji berries. You can mix and match with your favourite toppings. Fresh fruit, granola, nut butters – the choice is yours.

Ingredients

  • 1 ripe mango
  • ½ ripe pineapple
  • 2 bananas
  • 2 limes
  • 300ml coconut drink
  • 1 kiwi
  • ½ tbsp omega seed mix
  • 1 tbsp goji berries
  • 2-3 tsp desiccated coconut

Method

1. Slice the mango flesh off the stone, then slice away the skin. Scoop the mango into a large blender. Slice the top off the pineapple and halve it. Slice the skin off one half, using the tip of a small knife to scoop out any woody 'eyes' in the flesh. Roughly chop the pineapple half and add to the blender. Peel and break in 1 banana (save the other banana for later).
2. Finely grate in the lime zest and squeeze in the juice from both limes. Pour in the coconut drink and blitz until smooth and thick.
3. Pour or scoop the mango smoothie mix into 2 breakfast bowls. Slice the skin off the kiwi fruit, then slice it and arrange on top of the mango smoothie. Peel the remaining banana, slice it and arrange on top of the smoothie bowls, too.
4. Scatter the goji berries, omega seed mix and dessicated coconut over the bowls (or use your own preferred mix of toppings). Serve straight away.
