Lime, Chilli & Ginger Dipping Sauce

Hot and zingy, this fresh-tasting dipping sauce is the perfect partner to grilled prawns, steamed dumplings or crisp spring rolls. It's also delicious drizzled over baked lobster or smoked salmon as a dressing.

Ingredients

  • 1 garlic clove
  • 1-2 chillies
  • A thumb of ginger
  • 2 limes
  • 2 tbsp Worcester sauce
  • 1 tbsp honey
  • 2 tsp soy sauce

Method

1. Peel, trim and finely chop the garlic clove. Finely chop the chillies (use 1 for a milder sauce, 2 for a spicier sauce). When you chop the chillies, discard the seeds and white pith if you prefer less heat. Peel and finely chop the ginger.
2. Halve the limes and squeeze the juice into a bowl. Add the Worcester sauce, honey and soy sauce. Whisk together to combine and dissolve the honey. Taste and add a splash more soy sauce or honey, if you think it needs it.
3. Scoop in the garlic, chillies and ginger. Stir to combine. Pour the sauce into individual dipping bowls (or a large bowl to share) and serve with grilled prawns, baked lobster, dumplings or grilled chicken skewers. The sauce is also delicious drizzled over smoked salmon or grilled scallops.
