Korean Kiwi Dressing

A zingy little dressing that’s brill tossed in a cold noodle salad with lots of julienne veg.


  • 2 ripe kiwis
  • 1/2 tsp freshly grated ginger
  • 1/2 tsp tamari
  • 2 tbsp cold water
  • A pinch of sea salt
  • 2 tbsp olive oil
  • A few slices of fresh chilli
  • 1 lime, zest and a squeeze of juice

1. Halve your kiwi. Scoop the flesh into a blender or food processor. Add the rest of the ingredients. Blend till smooth. Taste. Tweak the flavours till you’re happy. If your kiwi aren’t quite ripe or sweet enough, add a little honey or agave.
