Gazza’s Cheaty Hollandaise

And you thought hollandaise was just for chefs... This easy peasy version is fab with new season asparagus, griddled purple sprouting broccoli or swirl in some finely chopped tarragon and drop of vinegar for a cheaty Be´arnaise!

  • 75g unsalted butter
  • 2 tbsp fresh lemon juice
  • 3 egg yolks
  • Sea salt
  • Freshly ground pepper

1. Gently melt the butter in a pan.
2. Place the lemon juice and egg yolks in a food processor or a large bowl.
3. Slowly whip up the lemon/ egg mix. Then, slowly trickle in the melted butter until fully incorporated.
4. Season to taste. Before serving, gently warm to thicken a little and heat through.
