Crisp Cucumber & Melon Cooler

This easy sipper is the perfect tonic for a hot day – though it makes a refreshing treat no matter the weather, made with cool cucumber, juicy melon and a zingy dash of lime.

  • 1 ripe Galia (or green fleshed) melon
  • ½ cucumber, peeled
  • 1 lime
  • 1 tsp agave syrup or honey
  • Sparkling water
  • Fresh mint, to serve
  • A shot of vodka or gin (optional)

Method

1. Halve the melon and scoop out the seeds. Cut the melon into wedges, peel and slice them into cubes.
2. Pop the cucumber in a blender or food processor with the melon, lime juice and agave syrup or honey. Whizz till smooth. Pass through a sieve to remove any lumps. Taste and add more lime or sweetener, if needed.
3. Serve the cucumber and melon cooler over ice in a jug with fresh mint leaves, topped up with ice-cold sparkling water. For the adults only version, add 2-3 shots of your favourite gin or vodka to the jug before serving. Melons up!
