Cider Buttered Greens

Simple blanched greens finished with a little West Country-inspired twist. The perfect side for just about anything.

Ingredients

  • 4 large handfuls of spring greens, kale or chard
  • 50ml cider
  • 1 tbsp butter
  • A pinch of mixed spice
  • Sea salt and freshly ground pepper

Method

1. Bring a large pot of water to the boil. Add a good pinch of salt. Strip out any woody stems. Roughly chop your greens.
2. Plunge in to the boiling water. Swirl through. Drain as soon as the greens are just soft but still a bright, glossy green.
3. Put your pan back on the heat. Add the cider. Let it boil up and reduce a little. Turn off the heat. Whisk in the butter with a pinch of mixed spice.
4. Fold the greens through. Season to taste.
