Chunky Sausage, Lentil & Potato Pot Pie

This hearty sausage and lentil pie makes a deliciously cosy dinner. It's made with organic pork sausages fried till golden with pot vegetables and herbs, then simmered in a spicy tomato and lentil sauce. Topped with sliced potatoes and baked until golden, it's a warming and satisfying pie that will become an instant family favourite.

Ingredients

  • 1 red onion
  • 2 celery sticks
  • 200g carrots
  • 4 garlic cloves
  • A handful of rosemary
  • 400g pork sausages
  • A pinch of cayenne pepper
  • 2 tsp smoked paprika
  • 400g tin of green lentils
  • 2 x 400g tins of chopped tomatoes
  • 500g potatoes

Method

1. Trim, peel and finely chop the onion. Trim any woody ends off the celery sticks then finely dice them. Trim and dice the carrots to match. Peel and finely crush the garlic cloves. Pick the rosemary leaves off the woody stalks. Finely chop. Set aside.
2. Use a small, sharp knife to slice down the middle of the sausages to open them out, then peel off the skin. Pour 1 tbsp olive oil into a large ovenproof pan and warm over a medium-high heat. Add the sausage meat to the pan and use the back of a wooden spoon to break the sausages up into bite-sized pieces. Season with salt and pepper. Fry, stirring regularly, for 8-10 mins till the sausages are golden brown and crispy. Scoop the sausages onto a plate and set aside.
3. Reduce the heat under the pan to low. Pour in 1 tbsp olive oil. Scoop in the onion, carrots, celery, garlic and rosemary. Season with a pinch of salt. Fry, stirring often, for 10-12 mins till the veg have softened. Add a pinch of cayenne pepper (cayenne pepper is HOT, so use as much or little as you prefer. You can add more later if needed). Dust in the smoked paprika. Fry for 2 mins till aromatic.
4. Drain and rinse the lentils. Add to the pan. Pour in the chopped tomatoes. Return the sausages and any of their juices to the pan. Stir well and simmer for 5 mins. Taste and adjust seasoning, as needed.
5. Preheat your oven to 180°C/Fan 160°C/Gas 4. Scrub the potatoes and slice them, as thinly as possible, into rounds. Take the sausage pan off the heat and spread the sliced potatoes, overlapping slightly, evenly over the surface. Brush the potatoes with olive oil and a pinch of salt and pepper. Slide the pan into the oven and bake for 30 mins, till the potatoes are tender and golden.
6. Divide the pie between four warm plates and serve.
