Method

1. Grease four individual pudding moulds (approximately 150ml) with butter, then tip in a little cocoa powder. Turn the moulds to coat them with the cocoa and tip out any excess. Set aside.
2. Break the chocolate into a heatproof bowl. Chop 100g butter and add to the chocolate. Melt the chocolate and butter in the microwave by heating it on 10 second blasts and stirring each time. Alternatively, pop the bowl over a pan of simmering water and warm till the chocolate and butter have melted. Remove from the heat and set aside.
3. Crack two eggs into a clean, grease-free bowl. Separate the yolks from two other eggs and add the yolks to the bowl. Add the sugar. Whisk together with electric beaters till pale and thick. The beaters should leave a trail in the mixture.
4. Pour in the melted chocolate and use a flexible spatula to fold everything together. Sift in the flour. Finely grate in the orange zest. Fold everything together. Divide between the pudding moulds, leaving a 1cm gap at the top of each basin. Pop them in the fridge and chill for 15-20 mins (they can be left overnight and baked within 24 hrs if you want to prep them ahead).
5. Meanwhile, preheat your oven to 200°C/Fan 180°C/Gas 6. Slice the remaining skin and pith off the two oranges. Slice them into segments, discarding the papery membranes. Pop the segments in a bowl and add 1 tbsp orange liqueur (this is optional, you can leave it out if you prefer). Stir gently to mix. Set aside.
6. To bake the Chocolate Fondants, pop the pudding basins on a baking tray and bake for 10-15 mins, depending on how gooey you'd like the middle of your puddings to be. Remove from the oven and let them cool for 30 secs to 1 min. Carefully turn them out onto serving plates. Add a few spoonfuls of whipped cream or crème fraîche to each plate and a few orange segments. Serve straight away.
