Buttery Sprouts with Garlic, Lemon & Thyme

Nothing says Christmas like a big bowl of Brussels sprouts on the table. Our twist this year is to sauté the sprouts in organic butter flavoured with thyme, garlic and lemon.

Ingredients

  • 1kg Brussels sprouts
  • 2 garlic cloves
  • A handful of thyme, leaves only
  • 100g butter
  • Sea salt
  • 1 lemon
  • Freshly ground pepper

Method

1. Wash the Brussels sprouts and trim the stalk ends so they’re neat and flat. Pull off any ragged leaves. Halve the sprouts.
2. Peel and thinly slice the garlic. Pick the thyme leaves and roughly chop them.
3. Add 100g of the butter to a deep frying pan or wok and melt it on a medium heat. Add the sprouts with a pinch of salt. Add the garlic and thyme then stir and fry for 4-5 mins till the sprouts are just tender.
4. When the sprouts are cooked, squeeze over some lemon juice. Add a pinch of salt and pepper, stir and serve.
