Method
1. Preheat your oven to 200°C/Fan 180°C/Gas 6. Add a splash of olive oil to a roasting tin. Chop the broccoli into bite-sized florets, leaving a decent hunk of stem attached to each floret. Tip the broccoli into the oiled tin.
2. Peel and finely chop the garlic. Finely grate the zest form the lemon. Add the garlic and lemon zest to the tin, then squeeze over the lemon juice. Season with a pinch of salt and pepper and toss to coat.
3. Slide the broccoli into the oven and roast for 15-20 mins, till tender and a little charred at the edges.
4. Transfer the roast broccoli to a warm serving plate. Grate over plenty of Parmesan cheese. Serve with bowls of balsamic vinegar for dipping as a starter, or drizzle over a little balsamic vinegar and serve as a side dish.
