Briezy Pommes & Pommes de Terre bake

Apples of the earth meet apples of the orchard by way of creamy organic brie, fragrant fresh herbs and some quality time together in the oven. This comforting bake matches the rich nuttiness of spuds with sweet fruit and mild, melty cheese to make a cosy meal for two, or a special side for four.

  • Sea salt
  • 4 large potatoes, peeled and sliced
  • 250ml pouring cream
  • 150ml stock*
  • A handful of rosemary, chopped
  • 1 clove of garlic, crushed
  • Freshly ground pepper
  • 3 apples, peeled, cored and sliced into rounds
  • 1 wheel of our organic Cotswold brie, sliced

*We used vegetable stock to keep this bake veggie friendly, but chicken stock works just as well. Prep: 10 mins | Cook: 40 mins

Method

1. Preheat your oven to 200°C/Fan 180°C/Gas 6.
2. Put a pan of water on to boil and add a pinch of salt. When the water is boiling add the potatoes. Gently boil for 5 mins.
3. Mix the cream and stock together. Whisk in half the rosemary, garlic, salt and pepper.
4. The potatoes should be soft but still firm. Drain and cool them under cold water so you can handle them without burning yourself.
5. Arrange a thin layer of apple and potato slices in an ovenproof baking dish. Sprinkle with a little rosemary and add a few slices of brie. Repeat the potato, apple, rosemary and brie layers till you run out.
6. Top the bake with brie and pour over the cream mixture. Bake in the oven for 40 mins, or till golden brown on top.
