Sizzle up some delicious tuna steaks, caught by traditional Basque fishing families in the Bay of Biscay. These Wild Albacore Tuna steaks comes from the northern stock of tuna, which is rated ‘Best Choice’ by the Marine Conservation Society. Northern albacore stock is robustly managed to prevent overfishing and levels of stock are at the highest point since the 1960s. Perfect for grilling, baking and pan frying, simply drizzle with olive oil and a pinch of salt and pepper. Caution: Although every care has been taken to remove bones, some may remain.

Producer

Sole of Discretion is an initiative that predominantly supports small-scale British fishers who fish ethically, sustainably and responsibly. Their methods have much less impact on the sea bed, using only static nets and hand lines, from smaller boats, and they truly care about the quality of their catch. Sole of Discretion will always agree a payment in advance with their fishers, which means that no matter the market conditions, fishers can always rely on being paid fairly.

With a very high oil content, albacore tuna is tasty seared. Albacore tuna has a firm, beef steak type texture, with large flakes and a mild rich taste to it. It has a much lighter colour than yellowfin or bluefin tuna, ranging from a light beige to rosy pink in the raw state. The meat turns white when cooked.
This fish has been previously frozen, and as such is not suitable for re-freezing.
