The cattle of Lombardy-based dairy, CasArrigoni, graze on a unique mix of heritage grasses across the Val Taleggio valley. This verdant pasture produces a sweetness in the cows’ milk unlike any other. CasArrigoni turn this milk into a beautiful cheese with a pungent, sea-washed rind, still retaining a delicate taste throughout each wheel. What truly separates this pale-yellow treasure from the rest though are the specks of black truffle dotted throughout. These bring out a sophisticated balance of rich intensity and milky mildness that turns just a single bite into a delectable treat.

The people at CasArrigoni have been at it for thirty years now, following the age-old traditions of the mountainous area, and they continue to fine-tune their know-how and expertise to ensure their cheese is never less than the best.
