Wild Garlic Butter

This wild garlic butter recipe is so easy, so delicious and if you put it in the freezer, you can enjoy that fantastic wild garlic flavour long after the season ends.


  • 1 pack of softened butter
  • 1 large handful of wild garlic
  • 1 lemon
  • Sea salt and freshly ground pepper

The perfect addition to any barbecue. Try it dolloped over Portobello mushrooms.

1. Add your softenend butter and large handful of wild garlic to a food processor.
2. Zest the lemon and add that also, along with a good squeeze of lemon juice and a pinch of salt and pepper. Then blend together, till combined.
3. Pop the mixture on greaseproof paper and roll into a parcel. It’ll keep for one week in the fridge, or freeze straight away. If you are freezing it, divide the mixture up into a couple of parcels, and enjoy wild garlic long after the season is over.
