Put the sunshine into your morning with this golden milk drink. Spiced with fresh turmeric, cardamom, ginger and cinnamon, this vegan latte is a deliciously warming treat

Ingredients

  • 1cm piece of ginger
  • 2cm piece of turmeric
  • 3 cardamom pods
  • A pinch of crushed pepper
  • 1 tsp coconut blossom nectar
  • 300ml almond milk
  • A pinch of ground cinnamon
  • 2 tsp coconut oil

Method

1. Peel and grate the ginger and turmeric into a pan. Crush the cardamom pods with a pestle, the end of a rolling pin or jam jar. Shake the black seeds out of the green papery husks into the pan. Add a pinch of black pepper.
2. Add the coconut oil, coconut nectar and almond milk to the pan. Set over a low heat and warm for 3-5 mins, whisking constantly, so the milk heats through and is foamy.
3. Taste the latte and add a dash more coconut nectar, if you think it needs it. Pour it into a large cup through a sieve and sprinkle with a pinch of cinnamon to serve.

This is a really lovely unusual hot drink and such a cheery colour too. I only used 1 tsp of coconut oil the second time I made it as 2 was a bit too rich for me. I also didn't peel the turmeric and ginger without it affecting the end result (plus saves getting yellow fingers!). Delicious and you know it's doing you good too.
