Summer Garden Collins

This riff on a classic gin cocktail is the perfect way to wind down on a warm, sunny day. Made with London dry gin, lemon juice and honey topped up with Luscombe's Rhubarb Crush, it' crisp and refreshing. A delicious drink to enjoy in the garden while watching the sun set.

Ingredients

  • 50ml London dry gin or alcohol-free gin alternative
  • 30ml fresh lemon juice
  • 15ml honey or agave syrup
  • Chilled Rhubarb Crush, to top up
  • Sliced strawberries & mint leaves, to serve

Method

1. Half-fill a cocktail shaker with ice. Pour in the gin or gin alternative, lemon juice and honey/agave. Seal and shake well for 30 secs or till the cocktail tin is cold and frosty looking.
2. Fill a highball glass with ice and tuck in a few strawberry slices and some mint leaves. Strain in the cocktail mix. Top up the glass with chilled Rhubarb Crush (approximately 100ml). Gently stir and serve with re-useable straw.
