Simple Jamaican Jerk Spiced Chicken

This chicken dish is a super simple route to big, bold flavours and plenty of heat, thanks to a Jamaican jerk seasoning blend packed with aromatic allspice, thyme, paprika, chilli and nutmeg. Baked for that essential smoky edge, and perfect served with coconut rice or a fruity salsa.

Ingredients

  • 2 chicken legs or 4 chicken thighs
  • 1 tbsp Jamaican jerk seasoning
  • Sea salt
  • Freshly ground pepper
  • 1 tbsp olive oil
  • 1 lime

Method

1. Pop the chicken pieces in a bowl. Dust the chicken with 1 tbsp Jamaican jerk seasoning and a pinch of salt and pepper, and drizzle over1 tbsp olive oil. Rub the chicken in the spiced oil to coat it well, then set aside for 1 hr to marinate.
2. Warm your oven to 200°C/Fan 180°C/Gas 6. Arrange the marinated chicken pieces in a roasting tin and slide it into the oven. Roast for 50 mins-1 hr, till the chicken is cooked through (if you pierce a piece the juices should run clear), browned and charred at the edges. Serve the chicken with wedges of lime and classic Caribbean sides like rice and peas, grilled corn or fried plantain.
