Pickled Red Onions

Marinating red onions in a sweet and salty lime brine is a fast way to make crisp and crunchy pickles that will perk up a ploughman's salad or make a tangy topping for hot dogs and burgers.

  • 2 medium red onions
  • 1 lime
  • 1 tsp sea salt
  • 1-2 tsp sugar

Method

1. Trim, peel and very finely slice the red onions. Set aside.
2. Squeeze the juice from the lime into a non-metallic mixing bowl. Add 1 tsp salt and 1 tsp sugar and stir well to mix and start dissolving the salt and sugar. Taste and add a little more sugar if you think it's too sour - the brine with be tangy, salty and a little sweet.
3. Add the sliced red onions to the bowl. Use your hands to turn the red onions in the lime pickling brine to coat them, then mix and scrunch them together for around 1 min to work the brine into the onions. Set aside for 15-30 mins to pickle.
4. Scoop the onions and their brine into a serving bowl. Serve on the side of salads - they're especially good with a ploughman's salad - or use to top hot dogs, serve with curries, orsprinkle over tacos with grilled fish and guacamole.
