Mediterranean Sardine & Chickpea Salad

Ready in 15 minutes, this vibrant, Mediterranean-style salad combines tender chickpeas, juicy cherry tomatoes and rich sardines with a handful of parsley, shallots and seasonal salad leaves. Finished with a zesty lemon, garlic and wholegrain mustard dressing, it makes a quick and flavour-filled lunch

Ingredients

  • 2 shallots
  • A handful of flat leaf parsley
  • 250g cherry vine tomatoes
  • 400g tin of chickpeas
  • 2 tins of sardines in olive oil & lemon
  • 1 garlic clove
  • 1 lemon
  • 1 tsp wholegrain mustard
  • 100g mixed salad leaves

Method

1. Trim, peel and finely chop the shallots. Finely chop the parsley stalks and roughly chop the parsley leaves.
2. Quarter the cherry tomatoes and add them to a large salad bowl, along with the shallots and chopped parsley.
3. Drain and rinse the chickpeas. Add these to the salad bowl. Use a fork to transfer the sardine fillets to the salad bowl and lightly mash them. Pour the remaining oil from the tins into a small bowl.
4. Trim, peel and grate the garlic clove. Add this to the small bowl with the sardine oil. Finely grate in the zest from the lemon. Squeeze in the juice from half the lemon. Scoop in the wholegrain mustard. Season with a pinch of salt and pepper. Whisk to make a smooth dressing. Taste and adjust the seasoning.
5. dd the salad leaves to the salad bowl. Drizzle over the dressing and toss well to mix.
6. Divide the salad between 2 plates and serve.
