Ingredients

  • 2 large carrots, coarsely grated
  • A pinch of chilli powder
  • 1 lemon
  • A drizzle of olive oil
  • 2 large handfuls of finely grated Parmesan
  • Freshly ground black pepper
  • Fresh basil leaves, to finish (optional)

Delicious as a side for roast lamb or to accompany a mozzarella, broccoli, tomato and black olive pizza.

Method

1. Toss the grated carrot in a bowl with a pinch of chilli powder. Grated in some lemon zest.
2. Squeeze in a good hit of lemon juice. Drizzle in a little olive oil. Toss.
3. Top with Parmesan and a good pinch of pepper. Gently mix through. Finish with an fresh dusting of Parmesan, and a smattering of fresh basil if you have some to hand.
