Honey and the Griddled Peach

Who knew basil could be so sweet? This pudding works with any stone fruit (nectarines, plums, peaches…).

  • 4 peaches
  • 3 tbsp honey
  • 1 orange, juice and zest
  • A handful of basil leaves, finely shredded
  • 1 tub of ricotta

1. Heat a dry griddle pan over a medium heat. Slice your peaches into segments. Brush with a little olive oil. Griddle the peaches for 2-3 mins on each side.
2. Add 2 tbsp honey to a pan with the orange juice and most of the zest. Heat till gently bubbling. Add the griddled peaches and half the basil to the honey sauce. Stir till the peaches are nicely covered.
3. Place the peaches in a bowl and drizzle with sauce. Mix 1 tbsp honey with the ricotta and dollop over the peaches. Finish with a sprinkle of basil leaves and the remaining orange zest.
