Green Smoothie Breakfast Bowl

This gorgeous green smoothie bowl has a secret golden heart made from golden beetroot, juicy mango, and spicy fresh turmeric. Blitzed with baby leaf spinach and a pinch of whey protein powder, they make a spoonable smoothie that is delicious served for breakfast in bowls, topped with your favourite mix of fruits, nuts and seeds.

Ingredients

  • 1 ripe mango
  • 1 golden beetroot
  • ½cm slice of fresh turmeric
  • 100g baby leaf spinach
  • 2 tbsp whey protein powder
  • 150ml Ultimate Almond Drink or water
  • Your chocie of fresh fruit, berries, nuts & seed, to top

Method

1. Peel the mango and slice the flesh away from the stone. Pop the mango flesh into a blender, saving 4-6 thin slices for later.
2. Trim the root from the beetroot and roughly chop it. Add the beetroot and turmeric root to the blender. Tuck in the baby leaf spinach. Sprinkle in the whey protein powder. Pour in the almond drink (or water) and drop in a few ice cubes.
3. Blend till smooth - it should be quite thick. Divide the smoothie between 2 bowls. Top with the reserved sliced mango and your chocie of fruit, nuts and seeds. Serve straight away.
