Grapefruit Frozen Margaritas

The perfect party drink, frozen margaritas are fun to mix and delicious to drink. This nicely icy version swaps the traditional triple sec for fresh ruby grapefruit juice and blitzes it with organic tequila and lime juice. This recipe serves 2, but if you have a big blender it can be easily doubled, tripled or more for a crowd.

  • A pinch of chilli powder (optional)
  • 1 lime wedge
  • 90ml tequila
  • 75ml fresh ruby grapefruit juice
  • 45ml lime juice
  • 45ml agave syrup

Method

1. Tip a pinch of sea salt into a pestle and mortar and crush it so it's finely ground. Add a small pinch of chilli powder, if liked, and stir to mix. Rub a wedge of lime around half the rim of 2 coupe glasses or margarita glasses. Tip the salt out onto a saucer and dip the glasses into it, so the salt sticks to the lime juice-coated side. Pop the glasses in the fridge.
2. When you're ready to make the margaritas, add 2 handfuls of ice to a blender. Pour in the tequila, grapefruit juice, lime juice and agave syrup. Blitz till slushy. Taste the mix and add a splash more agave syrup, if you think it needs it (or tequila or grapefruit juice). Pour the margarita mix into the salt-rimmed glasses and serve.
