Ingredients
- 1 onion, finely chopped
- A splash of olive oil
- 1 teaspoon paprika
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cumin
- A good pinch of ground cinnamon
- 4 mugs diced fresh tomatoes
- 1 slice stale bread, crumbled into small pieces
- 2 teaspoons honey
- A handful fresh coriander and/or mint, plus extra to garnish
- 1 lime

Method
1. Cook onion and spices in oil in a saucepan over moderate heat, till soft. Add the tomatoes, breadcrumbs and honey. Mix to warm it a bit.
2. Tip into a blender with the lime juice, herbs and a little lime zest. Blitz till smooth. Taste. Season, as needed. Press through a seive for a smoother soup, or leave chunky.
3. Pop soup in the freezer for 15 mins to eat chilled, or warm it in a pot if you prefer.
4. Serve with a scattering of herbs.
