Typically sweeter and more tender than green asparagus, white asparagus is a hugely popular variety, particularly in France and Germany. The white colour comes from being grown without being exposed to light, meaning it doesn't produce chlorophyll that gives asparagus its normal green colour. To prepare, just give it a quick rinse. You may need to peel the outer layer of the asparagus as this can be stringy and tough. White asparagus can be cooked just like regular asparagus - steamed, roasted and grilled are all excellent methods to bring out white asparagus' sweet flavour.
