Ready To Go Christmas Mincemeat

Forgot to buy the mincemeat but need to bake a batch of mince pies? This quick mincemeat is ready in under 30 minutes. Full of plump dried fruits and festive spice, it's easy to make and tastes delicious turned into mince pies, added to seasonal crumbles or used in a mincemeat and apple tart.

Ingredients

  • 500g mixed dried fruits
  • 200g Demerara sugar
  • 2 apples
  • 1 orange
  • 1 lemon
  • 1 tbsp mixed spice
  • 50ml sunflower oil
  • 150ml cranberry fruit drink

Method

1. Tip the mixed dried fruits and Demerara sugar into a medium-sized pan. Quarter the apples, slice out the cores and then coarsely grate them into the pan, grating down to the skin. Finely grate in the zest from the orange and lemon. Squeeze in their juice. Add the mixed spice. Pour in the sunflower oil and cranberry fruit drink.
2. Place the pan on a medium heat and bring up to a bubble, stirring occasionally. When it's bubbling, turn the heat down and pop on a lid. Gently simmer for 10-15 mins, stirring occasionally, until the fruit are plump and have absorbed most of the liquid.
3. The mincemeat is ready to use straight away – although it will be very hot, so mind your fingers. Transfer mincemeat you don't want to use straight away to a sterlised jar or tub and store in the fridge. It should keep for a month unopened. Use it within 2 weeks once opened.
4. Adding Alcohol
This mincemeat is alcohol-free. If you’d like to include alcohol, swap the cranberry juice drink for port, dark rum or brandy.
