Persimmon Lassi

Lassis are a yogurt-based drink popular in India. New season star, persimmon is blitzed with dairy-free coconut yogurt to make a thick and lush smoothie.

  • 2 persimmons
  • 2 bananas
  • 1 lime
  • 125g coconut milk yogurt alternative

Method

1. Slice the leaves and stalks off the persimmons. Roughly chop the persimmons and pop them in a blender. Peel and break in the bananas. Squeeze in the juice from the lime. Add a little pinch of sea salt.
2. Spoon the dairy-free yogurt into the blender and add a few ice cubes. Blitz till smooth. If the lassi is too thick, trickle in a little water till you get the consistency you want. Serve straight away.
