- A bundle of purple sprouting broccoli
- A splash of water
- A knob of butter
- Sea salt and freshly ground pepper

Method
1. Set a large frying pan over high heat. Strip any excess leaves from your broccoli. Halve or break up any larger, woodier stems into smaller pieces.
2. Tumble the broccoli into the smoking hot pan in a single layer (you can overlap a little).
3. Season well. Cook on all sides till just a little charred around the edges, 2-3 mins. Add a splash of water (just 3-4 tbsp). Let it steam and evaporate.
4. Add a nugget of butter to the pan. Turn the heat off. Toss to coat. Tumble on a plate and get stuck in. It’s the perfect springtime veg side.
