The zingy mix of lime and mint that gives Cuban mojitos their brightness bring a tangy freshness to this non-alcoholic version, mixed together with a splash of Matcha, Lime And Mint Cider Vinegar Drink.

Ingredients

  • 1 lime, plus a wedge to garnish
  • 1 tsp caster sugar
  • 3-4 mint sprigs, plus a sprig to garnish
  • 250ml Matcha, Lime And Mint Cider Vinegar Drink, chilled

Method

1. Juice the lime into a clean pestle and mortar or a small bowl. Chuck in the juiced lime halves. Add the sugar. Pick the leaves off 3-4 mint sprigs and add them to the lime and sugar. Use a pestle or the end of a rolling pin to crush the lime, mint and sugar together for 1-2 mins.
2. Fill a tumbler with ice and strain the lime mixture into the glass, discarding the lime skins and mint leaves. Top up with the Matcha, Lime And Mint Cider Vinegar Drink and gently stir to mix. Garnish with a wedge of lime and a mint sprig.
