- 250ml double cream
- 2 tbsp caster sugar
- 5 large strawberries
- 2 slices of soft, white bread

Method
1. Pour the cream into a mixing bowl and add the sugar. Use electric beaters to whisk the cream until soft peaks form. Slice the green tops off the strawberries, but leave them whole.
2. Place 2 slices of bread on your work surface and spread both with ¾ of the cream, making sure they're all equally covered. Place 1 large strawberry in the middle of a slice, then arrange the rest of the strawberries around in with the points tall facing in the same direction. Spoon the remaining cream around the strawberries to fill in the gaps. Place the other slice of bread over the top, cream side down.
3. Wrap the sandwich tightly in plastic wrap or beeswax paper and chill in the fridge for 20 mins. Unwrap the sandwich, then slice off the crusts. Slice in half to make 2 triangles. Serve straight away.
