Melon, Cucumber & Mint Smoothie

The ultimate summer refresher. Melon, cuke and lettuce make a cooling smoothie blended with zingy mint.

Ingredients

  • ½ melon
  • 1 short cucumber
  • 1 lettuce
  • A handful of mint, leaves only
  • 300ml maple water
  • A few ice cubes

Method

1. Halve the melon. Scoop out the seeds, then scoop out the flesh and pop it into a blender. Halve the cucumber Roughly chop 1 half and add that to the blender (see our tip below on what to do with your extra melon and cucumber).
2. Roughly chop the lettuce and add that to the blender. Pick the mint leaves off their stems and add them with 300ml maple water. Blitz for a few mins till combined and smooth. Serve straight away, poured over ice.
3. Tip: If you've got a big blender, you can use a whole melon and cucumber to make a jug of smoothie for 4.
