Marie Rose Sauce

This classic prawn cocktail sauce takes just 5 minutes to mix together. Smooth, rich and tangy, it's delicious stirred into prawns to make a simple seafood starter. Or serve it as a dipping sauce with chunks of baked lobster or crab.

Ingredients

  • 125g mayonnaise
  • 2 tbsp ketchup
  • A pinch of chilli powder
  • 1 tsp Worcester sauce
  • 1 tbsp lemon juice
  • 1 tsp brandy or cognac (optional)

Method

1. Spoon the mayonnaise into a bowl. Add the ketchup, a pinch of chilli powder, the Worcester sauce, lemon juice and brandy or cognac, if you're using it. Season with a little salt. Stir together till smoothly combined. Taste and add more salt, lemon juice or chilli powder, if you think it needs it.
2. The Marie Rose Sauce can be spooned into a serving bowl (or individual serving bowls) to be used as a dip for grilled prawns, baked lobster or crab. Or stir it into cooked prawns and spoon into lettuce cups to make a classic prawn cocktail.
