  • 2-3 courgettes
  • 50g grated Parmesan
  • Sea salt and freshly ground pepper
  • A splash of olive oil

1. Preheat your even to 200°c/Gas 6. Tip your Parmesan, salt and pepper into a large mixing bowl. Slice up your courgettes and give them a toss with the cheese. Drizzle a baking paper-lined tray with oil and place your courgettes slices side by side. Pop them into the oven till crispy.
