Chocolate-Dipped Kiwis

Have you tried eating kiwi fruit dipped in dark chocolate and then topped with a sprinkle of omega-rich seeds and tart goji berries? If not, you're missing out on a snack that's sweet, rich and satisfying. If you leave the skin on the kiwi before dipping, you'll also benefit from a little extra fibre.

Ingredients

  • 4 firm kiwi fruit
  • 80g dark chocolate
  • ½ tsp coconut oil
  • A large pinch of goji berries (optional)
  • A large pinch of omega seed mix (optional)

Prep: 30 mins + chilling | Cook: 1-2 mins

Method

1. Line a baking tray with baking paper. Slice the kiwis into ½cm-thick slices – you can leave the skin on or slice it off, depending on your preference. You should have around 20-25 slices.
2. Pop the dark chocolate into a heatproof bowl and add ½ tsp coconut oil. Heat in a microwave in bursts of 10-15 secs, stirring regularly, till the chocolate is melted and smooth. No microwave? Pop the chocolate and coconut in a heatproof bowl and set over a pan of simmering water and stir till the chocolate melts.
3. If you're using the goji berries, roughly chop them.
4. Dip each slice of kiwi in the chocolate, dipping it in halfway, then pop on the baking tray. Sprinkle with a pinch of chopped goji berries, mixed seeds and a little sea salt (the toppings are optional) then repeat with the remaining chocolate and kiwis.
5. Chill in the fridge for 30 mins till set, then transfer to a tub, separating the layers of kiwis with baking paper. They will keep in the fridge for up to 3 days.
