Carrot, Coconut & Turmeric Smoothie

A gorgeous golden medley that you can have cold as a smoothie or warm it up, with a twist of stock, and enjoy it as a soup.

Ingredients

  • 3 carrots
  • 1cm piece of turmeric
  • 200ml coconut milk
  • 300ml coconut water
  • ¼ tsp ground cinnamon
  • A pinch of freshly ground pepper
  • A squeeze of lime juice

Method

1. Give your carrots a scrub (no need to peel them unless you want to) and roughly chop them. Peel your turmeric and chop it. Add everything to your Nutribullet and blend till smooth.
2. If you want to twist this smoothie into a soup, blitz in 1 tsp vegetable stock powder and gently warm through for a few mins before serving.
