Buttered Cauliflower Leaves

Save your cauliflower leaves from the compost – sizzle them in butter, add a grating of aromatic nutmeg and then serve alongside your favourite grilled meats, fish or veggie mains. Field to fork eating our taste buds can get behind.

Method

1. Finely slice the cauliflower leaves. Put a small frying pan on a medium heat and add a little butter. Swirl it round the pan to melt it, then add the cauliflower leaves. Fry, stirring, for 3-5 mins till the leaves are tender and a little browned. If they seem too dry while frying, add more butter or a splash of water.
2. Grate in a little nutmeg and season with salt and pepper. Serve alongside grilled meats, fish, tempeh or tofu sausages.
