Leftover mint will keep in your fridge for 2-3 days. Make a quick mint tea by rolling the sprigs between your hands to release the oils, then popping them into a heatproof glass. Cover with freshly boiled water and steep for 2-5 mins. Remove the mint and add honey or agave syrup to sweeten, if liked.
