Apricot, Carrot & Cinnamon Smoothie

Rise and shine with a glassful of this golden, cinnamon-spiced breakfast smoothie. Ripe apricots are a summer treat and they pair deliciously with sweet spices. Add in creamy banana, crisp carrots and a swirl of oat drink and you have a seasonal smoothie that packs in the plants.

  • 200g carrots
  • 200g apricots
  • 1 banana
  • ½ tsp cinnamon
  • 1 tbsp pumpkin seeds
  • 500ml oat drink

Method

1. Trim, scrub and chop the carrots. Slice the apricots in half. Scoop out the stones. Roughly chop the apricots. Add them to your blender with the carrots. Peel and break in the banana.
2. Tip in the cinnamon and pumpkin seeds. Pour in 500ml oat drink. Add a handful of ice and blitz for 2 mins till smooth. Pour into 2 glasses and serve.
